Lemon Chicken
With only six ingredients – this Lemon Chicken Recipe is a winner. Serve with a side of cous cous and some steamed greens.
With only 6 ingredients – you are going to love it! If you have time marinate the chicken to let the lemon, garlic and Rosemary flavours soak into the breast. You can prep the day before or in the morning before you head out.
We like to use Mt Barker Chicken.
If you make extra, shred the chicken and add it to a salad for lunch the next day.
Lemon Chicken
This is an easy peasy Chicken dish. With only 6 ingredients – you are going to love it! If you have time marinate the chicken for 30 minutes to 8 hours.

Ingredients
- 6 chicken breasts 120g each
- 2 sprigs fresh rosemary leaves
- 2 garlic cloves finely sliced or minced
- 1 shallot or spring onion sliced
- 1 lemon juiced and grated
- ½ cup olive oil
Instructions
Marinade
- In a shallow ovenproof dish add the olive oil, garlic, shallots, lemon rind and zest. Give it a whisk and add the chicken. Marinate in the fridge for 30 mins to 8 hours
Baking
- Preheat the oven to 180°C
- Remove the chicken from the marinade and place on a baking tray lined with baking paper
- Bake in the oven for 25 minutes or until golden brown
- Serve with cous cous and steamed veggies or a garden salad.
