Lemon Chicken

This is an easy peasy Chicken dish. With only 6 ingredients - you are going to love it! If you have time marinate the chicken for 30 minutes to 8 hours.

Ingredients

  • 6 chicken breasts 120g each
  • 2 sprigs fresh rosemary leaves
  • 2 garlic cloves finely sliced or minced
  • 1 shallot or spring onion sliced
  • 1 lemon juiced and grated
  • ½ cup olive oil

Instructions

Marinade

  • In a shallow ovenproof dish add the olive oil, garlic, shallots, lemon rind and zest. Give it a whisk and add the chicken. Marinate in the fridge for 30 mins to 8 hours

Baking

  • Preheat the oven to 180°C
  • Remove the chicken from the marinade and place on a baking tray lined with baking paper
  • Bake in the oven for 25 minutes or until golden brown
  • Serve with cous cous and steamed veggies or a garden salad.
