Chicken Risoni
This Chicken Risoni recipe is the ultimate comfort food. It's simple, tasty, creamy and is oh so good!

Equipment
Fry pan with lid
Ingredients

butter

tbsp
oil
200
g
mushrooms
sliced
2
spring onions
finely sliced
1
clove
garlic
minced
500
g
chicken thigh
diced
6
leaves
sage
finely chopped
300
g
Risoni pasta
600
ml
chicken stock
6
bocconcini
torn
salt & pepper
Instructions
Heat butter in a the pan, when it starts to bubble add the mushrooms and cook (2 mins)
Add the spring onions and cook (1 min)
Remove the mushrooms and spring onions from the pan and set aside to cool
Add the oil to the pan, bring to medium heat and sear the chicken - don't brown just make sure it's not pink (3 mins)
Pour over the stock and bring to the boil
Add the Risoni and boil (5 mins)
Return the musrooms and spring onion
Add the bocconcini, sage and serve
Notes
Add some steamed veggies to bulk up this dish if you are super hungry.
