Chicken Risoni

This Chicken Risoni recipe is the ultimate comfort food. It's simple, tasty, creamy and is oh so good!

Equipment

  • Fry pan with lid

Ingredients

  • 1 tsp butter
  • 1 tbsp oil
  • 200 g mushrooms sliced
  • 2 spring onions finely sliced
  • 1 clove garlic minced
  • 500 g chicken thigh diced
  • 6 leaves sage finely chopped
  • 300 g Risoni pasta
  • 600 ml chicken stock
  • 6 bocconcini torn
  • salt & pepper

Instructions

  • Heat butter in a the pan, when it starts to bubble add the mushrooms and cook (2 mins)
  • Add the spring onions and cook (1 min)
  • Remove the mushrooms and spring onions from the pan and set aside to cool
  • Add the oil to the pan, bring to medium heat and sear the chicken - don't brown just make sure it's not pink (3 mins)
  • Pour over the stock and bring to the boil
  • Add the Risoni and boil (5 mins)
  • Return the musrooms and spring onion
  • Add the bocconcini, sage and serve

Notes

Add some steamed veggies to bulk up this dish if you are super hungry.
