The Ultimate Chocolate Brownie
This really is the ultimate chocolate brownie. It’s moist, gooey on the inside and crunchy on the outside. Serve with sweetened cream or ice cream.
Instead of buying a gift make up a batch of these brownies, wrap them in some brown wax paper and some twine and watch the recipient’s eyes light up when they see, smell and taste them!
You will never buy pack mix again!
This recipe makes enough for 6 – 8 people.

Ingredients
Brownies
- ⅓ cup plain flour
- ½ cup dark cocoa powder
- 2 cups castor sugar
- 1 cup chopped pecans or pistashios optional
- 250 g dark chocolate
- 250 g butter
- 2 tsp vanilla essence
- 4 eggs lightly beaten
Sweetened Cream
- 1 tsp vanilla essence
- 2 tsp icing sugar
- 300 ml whipping cream leave in the fridge until required

Brownies
- Preheat the oven to 180°C.
- Line a rectangular baking tray with baking paper.
- Melt the butter in a small sauce pan over low heat. Do not let it brown. Set aside to cool.
- In a large bowl, sift the flour, cocoa and sugar. Add nuts (if using). Mix well.
- Break the chocolate into small pieces (you can buy chocolate drops to make this part quicker).
- Stir in the lightly beaten eggs, vanilla and butter. It is important that the butter is not too hot as it will l cook the eggs. Stir to combine.
- Pour the mixture into the tin; smooth out the surface. Bake for 45 minutes.
- Allow to cool in the tin before cutting it into squares. Dust with a little icing sugar, if you wish.
Sweetened Cream
- Place the cream in a bowl, add the vanilla essence and icing sugar and whisk until soft peaks form.
