Servings: 25 Rumballs
Equipment
- Food processor or rolling pin and a ziplocked bag
- Large mixing bowl
- Wooden Spoon
- Teaspoon
- Airtight container
Ingredients
- 250 g plain biscuits
- 1 cup sweetened condensed milk
- 1 ½ cups fine desiccated coconut extra for coating
- ½ cup cocoa powder extra for coating
- 2 tbsp dark rum or rum essence / vanilla essense
Sprinkle options
- 100 g chocolate sprinkles for coating
- 100 g crushed nuts
Instructions
- Place biscuits in a food processor and process to make fine crumbs (or crush well in a large zip lock bag with a rolling pin).
- Transfer crumbs to a mixing bowl. Using a wooden spoon, stir in condensed milk, coconut, cocoa and rum and mix until well combined.
- Refrigerate for 20 minutes or until cold and firm.
- Sprinkle the coconut onto a large dinner plate
- Using damp hands, roll level tablespoons of mixture into balls.
- Roll the balls in the coconut (or your choice of coating) and put into an airtight container.
Notes
Before you start to roll out the balls, wet your hands slightly to prevent the mixture from sticking.
If the kitchen is hot place the rumball mixture in the fridge for 30 minutes to help it to firm up so it’s easier to handle.
If stored in an airtight container, lined with baking paper, the rumballs will last for around on week in the fridge and two months in the freezer.
