Easy Oven-Baked Sausages
This Easy Oven-Baked Sausages recipe transforms the humble sausage into a warm tasty winter feast. Sausages are no longer just for the BBQ! Serve with a side of mash potato, some baked beans and corn on the cob – yum!
The tomatoes, garlic and herbs create a warm bed for the sausages to soak in the flavours as they slowly cook.
Left overs are great in the morning, heat and serve with a lightly fried egg. This is the ultimate comfort food.
Easy Oven-Baked Sausages
Servings: 4 people
Ingredients
- 12 Sasuages Chicken, Beef or Pork
- 2 kg Cherry Tomatoes or 2 x 400g cans of diced tomatoes
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 dried bay leaves
- 1 tbsp dried oregano
- 3 cloves of garlic crushed
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar optional
- Salt and Pepper
Instructions
- Pre heat oven to 190°C
- In a deep baking tray, add the tomatoes, herbs, garlic (add balsamic vinegar if using)
- Lay the sausages on top of the tomato mixture, drizzle with the olive oil and season with salt and pepper
- Bake for 30 minutes
- After 30 minutes, turn the sausages over and bake for another 15 – 30 minutes (depending on how golden you like your sausages).
Notes
Change up this dish by adding some cauliflower florets and a tsp of curry powder to the tomato mixture.
