Chicken Risoni

This Chicken Risoni recipe is the ultimate comfort food. It’s simple, tasty, creamy and is oh so good!

Risoni is small rice like pasta. This recipe is for 4 people if you are cooking for one or two, and want to reduce the amount of Risoni just double the amount of liquid vs pasta, i.e. 100g Risoni add 200ml stock. Add some steamed vegetables to bulk it out and add a little lemon juice to give it a zing!

I like to add a little chilli or Sumac to give the dish a lift.

Chicken Risoni

Equipment

  • Fry pan with lid

Ingredients

  • 1 tsp butter
  • 1 tbsp oil
  • 200 g mushrooms sliced
  • 2 spring onions finely sliced
  • 1 clove garlic minced
  • 500 g chicken thigh diced
  • 6 leaves sage finely chopped
  • 300 g Risoni pasta
  • 600 ml chicken stock
  • 6 bocconcini torn
  • salt & pepper

Instructions

  • Heat butter in a the pan, when it starts to bubble add the mushrooms and cook (2 mins)
  • Add the spring onions and cook (1 min)
  • Remove the mushrooms and spring onions from the pan and set aside to cool
  • Add the oil to the pan, bring to medium heat and sear the chicken – don't brown just make sure it's not pink (3 mins)
  • Pour over the stock and bring to the boil
  • Add the Risoni and boil (5 mins)
  • Return the musrooms and spring onion
  • Add the bocconcini, sage and serve

Notes

Add some steamed veggies to bulk up this dish if you are super hungry.
